Peach, Apple & Blueberry Fool

This fabulously fresh and fruity Peach, Apple & Blueberry Fool is a school holiday saviour – it can be made in advance and stored in mini glasses in the fridge until hunger strikes.

Try this Eton Mess for another easy breezy summer pudding!

Ingredients

2 ripe peaches, quartered
1 apple, peeled and diced
100g blueberries
2 tsp maple syrup
120ml double cream
100ml Greek yogurt

Method

  1. Put the peaches and apple into a steamer. Steam for 8 to 10 minutes. Add the blueberries for 2 minutes. Blend until smooth using a stick blender. Cool.
  2. Whisk the double cream until lightly whipped. Stir in the yoghurt. Add the maple syrup to the fruit when cold. Mix into the cream mixture. Spoon into small glasses or pots.
