Pea, Corn & Tomato Fritters

Sweetcorn fritters don’t stick around for long and both little ones and grown-ups will love these! Leave out the peas and add more sweetcorn if you prefer.


100g self-raising flour
2 eggs
50 ml milk
1 tsp baking powder
50g frozen peas, thawed
50g tinned sweetcorn, drained
75g Cheddar, grated
75g cherry tomatoes, chopped
1 tbsp fresh basil, chopped
1 clove garlic, crushed
2 tbsp sundried tomato pasta


  1. Measure the flour, eggs, milk, and baking powder into a mixing bowl and whisk together. Add the peas, sweetcorn, cheese, tomatoes, basil, garlic, and sundried tomato paste and mix well.
  2. Heat a little oil in a frying pan. Add small spoonfuls of the mixture to the pan. Fry for 2 to 3 minutes on both sides until lightly golden and cooked through.
