Orzo Rainbow Salad

You can make this tasty rainbow salad in 10 minute. It is easy to prepare the night before you need it. All you have to do is toss in the dressing in the morning and pop it in your child’s lunchbox or, even better, put the salad dressing in a small pot and let your child add the dressing just before eating.

Ingredients
125g orzo pasta
75g tiny broccoli florettes
150g sweetcorn
100g cooked chicken diced
100g Piccolo Cherry Tomatoes, quartered
2 tbs basil, chopped

Dressing

2 ½ tbs rice wine vinegar
4 tbsp Olive oil
1 tbs sweet chilli sauce
75g Piccolo Cherry Tomatoes, finely diced
1 tbs chives, chopped
Method

1. Cook the orzo pasta in boiling water according to the packet instructions. Add the broccoli for 2 minutes before the end of cooking time. Drain & refresh in cold water.
2. Put the pasta, broccoli & corn, quartered tomatoes & basil into a mixing bowl.
3. Mix all of the dressing ingredients together in a small jug.
4. Pour over the salad just before serving.
