Orzo Pasta with Meatballs and Vegetable Sauce

Mix up your weeknight dinner plan with this delicious twist on an Italian classic: Orzo Pasta with Meatballs and Vegetable Sauce. This recipe is bound to become a new family favourite.

Ingredients

2 tablespoons olive oil
1 large red onion, chopped
1 red pepper, diced
1/2 yellow pepper, diced
3 cloves garlic, crushed
3 large tomatoes, quartered
400mls chicken stock
225g orzo pasta
2 tablespoons basil, chopped
25g parmesan, grated

350g mince beef
1/2 red onion, chopped
75g fresh breadcrumbs
1 clove garlic, crushed
a few drops Worestershire sauce
1 tablespoons ketchup
2 teaspoons thyme, chopped

Method

  1. Heat the oil in a frying pan. Add the peppers and onion and fry for 5 minutes. Add the garlic and tomatoes and cook for 10-15 minutes until the vegetables are cooked and the sauce has reduced. Add the stock and orzo and cover with a lid. Simmer for about 12- 15 minutes until the orzo is cooked . Remove the lid and add the basil and cheese.
  2. Put the mince beef, onion, breadcrumbs, garlic, Worcestershire sauce, ketchup and thyme into a processor. Whiz until finely chopped. Shape into 20 balls.
  3. Heat a little oil in a frying pan. Add the balls and fry over the heat until golden brown and cooked through.
  4. Serve with the orzo.
