New Potato, Courgette and Tomato Spanish Egg Omelette

This New Potato, Courgette and Tomato Spanish Egg Omelette is the perfect quick and easy tummy filler. And the best thing is it can be eaten hot or cold – whilst we doubt you’ll have leftovers, this makes for the ideal lunchbox addition!

Ingredients

1 tbsp. olive oil
1 onion sliced
1 small courgette, sliced
100g cooked new potatoes, sliced
5 cherry tomatoes, sliced
4 large eggs, beaten
2 tbsp. milk
40g parmesan

Method

  1. Heat the oil in a small frying pan. Add the onion and courgette and fry for 8 minutes. Add the potato and mix together…..Ingredients: 1 tbsp. olive oil, 1 onion (sliced), 1 small courgette (sliced), 100g cooked new potatoes (sliced).
  2. Beat the eggs and milk together. Pour over the vegetables. Top with the tomatoes and cheese……Ingredients:  4 large eggs (beaten), 2 tbsp. milk, 5 cherry tomatoes (sliced), 40g parmesan.
  3. Heat over a medium heat until set around the edges, then put under a hot grill for 8 to 10 minutes until set in the middle and lightly golden.
