My First Christmas Lunch

Now the little ones can join in the fun and festivities on Christmas day joining the rest of the family at the big table for their first Christmas Dinner.

Ingredients

1 tbsp sunflower oil
75g leek, chopped
80g butternut squash, diced
100g parsnip , peeled and diced
80g potatoes, peeled and diced
300ml low salt or unsalted chicken stock
100g cooked turkey diced

Method

  1. Heat the oil in a saucepan. Add the leek, squash, parsnip, carrots, and potatoes. Fry over a high heat for a few minutes .
  2. Add the stock, bring up to the boil then simmer for 15 minutes .
  3. Add the cooked turkey and mash puree or chop.
