Mother’s Day Cookies

These sweet and thoughtful cookies are sure to put a smile on the face of any Mum this Mother’s Day.


175g Plain flour
100g Chilled butter, cubed
85g Icing sugar
1 tsp Vanilla extract
1/8 tsp salt
6 tbsp raspberry or strawberry jam
Additional icing sugar to dust cookies with


  1. Put the flour, butter, sugar, vanilla and egg yolk in a food processor. Dribble in 1 TBS water, and blitz until the mix comes together to form a dough.
  2. Place onto a work surface, and knead briefly to bring together, then wrap in cling wrap, and chill for 20 minutes. (The chefs can prepare the dough)
  3. Once chilled, roll out on a floured surface using a rolling pin and cut 30 heart shapes. Using a smaller heart cutter, cut a small heart in the middle of 15 of the biscuits
  4. Alternatively use a fluted round cutter and cut out the letters ‘M’ ‘U’ ‘M’  and for each cut-out cookie with a letter make one whole fluted round cookie so that you can sandwich them together when baked.
  5. Bake in an oven preheated 160 Fan /180 C for  12 minutes, or until light golden brown.
  6. When completely cool, spread some jam on the complete halves of the hearts or fluted circles, leaving a small border around the edge.
  7. Place all the heart cookies that have the middle cut out onto a separate tray and dust with icing sugar.
  8. Carefully place a heart with the middle cut out on top of the jam cookie or a cut-out letter and lightly press together
