Mint Chocolate Chip Ice Lollies

100ml double cream
250ml Greek yogurt
200g condensed milk
¼ - ½ tsp peppermint extract
Green food colouring
25g plain chocolate chips
100g plain chocolate, for serving


  1. Lightly whip the cream to soft peaks. Add the Greek yogurt and condensed milk. Whip again until slightly thickened. Add the peppermint to taste. Add enough green food colouring to make a minty green colour. Add the chocolate chips.
  2. Spoon into 6 lolly moulds. Insert 6 wooden sticks. Freeze for 6 hours or overnight.
  3. Melt the chocolate in a bowl over simmering water until runny. Remove the lollies from their moulds and drizzle over the melted chocolate. Place on a baking sheet lined with non stick paper, Put back into the freezer for 30 minutes until set.
