Ingredients
100g self raising flour
40g parmesan, grated (or vegetarian alternative)
4 spring onions, chopped
50g spinach, chopped
1/2 teaspoons baking powder
1 egg, beaten
100mls buttermilk
40mls sunflower oil

Method
- You will need a 12 hole mini muffin tin lined with cases.
- Pre heat the oven to 160 fan.
- Measure the flour, baking powder, onions, parmesan and spinach into a mixing bowl. Beat the egg with the buttermilk and oil. Add the wet ingredients to the dry and mix well. Spoon into the mini muffin. Bake in the oven for 20 minutes until well risen and lightly golden on top.
