Mini Chicken Balls

Annabel developed this recipe for her son who was very fussy; he loved apples but refused to eat chicken. But, hey presto! Her mini chicken and apple balls were a hit and encouraged him to chicken for the first time.

Ingredients
1 onion, finely chopped
1 1/2 tbsp sunflower oil, plus extra for frying
1 garlic clove, peeled and crushed
340g chicken thigh mince
60g breadcrumbs
35g Parmesan cheese, finely grated
1 small apple, grated
1 small egg yolk
1 tbsp fresh sage, chopped
A little plain flour
Method
  1. Heat the oil in a saucepan and sauté the onion for 5 minutes until soft. Add the garlic and sauté for 1 minute. Leave to cool.
  2. Mix the chicken, breadcrumbs, sautéed onion, Parmesan cheese, grated apple, egg yolk and sage. Lightly dust in flour.
  3. Heat a thin layer of oil in a frying pan. Cook the chicken balls for about 5 minutes or until golden and cooked through.
