Ingredients
110g plain flour
70g unsalted butter
50g Parmesan cheese, grated (or vegetarian alternative)
50g mature Cheddar cheese, grated
10g chia seeds
1 egg, beaten
1 tsp fresh thyme, chopped

Method
- Preheat the oven to 160˚C fan / 325˚ F / Gas Mark 3.
- Line two baking sheets with non-stick baking paper.
- Measure the flour, butter, cheese, thyme and chia seeds in a food processor. Whiz until the mixture is roughly chopped.
- Add the egg and whiz again until the dough comes together.
- Roll out on a floured work surface to slightly thinner than a £1 coin.
- Stamp out rounds using a small, fluted cutter. Place on the baking sheets.
- Bake for 20 to 22 minutes until lightly golden and firm in the centre.
- Allow to cool on a wire rack.
