Meatballs are a failsafe family favourite and the butternut squash here adds a natural sweetness to appeal to little ones. Great on their own or why not pair with some roasted sweet potato wedges, or spaghetti and a tomato sauce for a more complete meal.

Ingredients
250g butternut squash, peeled and cubed
1 red onion, sliced
1 small red pepper, diced
2 tbsp sunflower oil
250g lean minced beef
2 tsp fresh thyme
30g Panko breadcrumbs

Method
- Put the squash, onion, sweet pepper and oil onto a baking sheet. Toss to coat, then roast in a 200C Fan oven for 25 minutes. Leave to cool.
- Put the vegetables, thyme, breadcrumbs and minced beef into a food processor whiz until finely chopped and shape into 25 balls.
- Heat a little oil in a frying pan. Add the balls and fry over a medium heat for 10 minutes until cooked through and browned.
- Alternatively preheat the oven to 180C Fan and cook the meatballs in the oven for about 15 minutes until browned and cooked through.
