Ingredients

  • 1 tbsp oil
  • 90 g onion, chopped
  • 80 g leek, chopped
  • 75 g celery, chopped
  • 100 g carrot, diced
  • 35 g pepper, diced
  • 100 g sweet potato, diced
  • 10 g garlic puree
  • 200 g chopped tomatoes
  • 500 ml vegetable stock
  • 100 g tinned haricot beans
  • 15 g sunblush tomatoes
  • 2 tsps tomato puree
  • 1 tsps thyme, chopped
  • 3 tsps apple juice
  • 20 g parmesan, grated
  • 20 g Annabel Karmel Shell Pasta

Method

  1. Heat the oil in a saucepan. Add the onion, leek, celery, carrot and red pepper. Fry for 5 minutes.
  2. Add the sweet potato and garlic and fry for 2 minutes. Add the tomatoes, stock, beans, sunblushed tomatoes, tomato puree, thyme and apple juice.
  3. Bring up to the boil, cover and simmer for 20 minutes.
  4. Add the parmesan. Reserve a few large tbsp of puree, then blend the remaining until roughly smooth.
  5. Mix with the reserved mixture and puree together. Add the cooked pasta shells.
