Mildly Spiced Chicken with Apricots

Baby’s love flavour, fact! This Mildly Spiced Chicken with Apricots puree will not disappoint. With just the right amount of mild spice and natural sweetness, it’s the perfect balance of flavour.

1 tbsp olive oil
100g red onion, chopped
3 carrots, peeled and diced
½ yellow pepper, diced
1 clove garlic, crushed
150g chicken thigh, diced
120g butternut squash, diced
4/5 dried apricots
½ tsp cumin
½ tsp coriander
300g chopped tomatoes
1 tbsp tomato paste
150ml chicken stock


  1. Heat the oil in a saucepan. Add the onions, carrots, pepper, and garlic and fry for 2 to 3 minutes. Add the chicken and squash, apricots & spices and fry until browned.
  2. Add the tomatoes, tomato paste, and stock. Cover and simmer for 30 minutes until tender.
  3. Blend to the desired consistency.
