Ingredients
2 tbsp olive oil
2 small skinless chicken breasts, sliced into thin strips
0.75 tsps honey
80 g red onion, thinly sliced
1 yellow pepper, deseeded & thinly sliced
1 courgette, sliced into thin batons
2 tomatoes, deseeded & sliced into thin strips
0.75 tsps sweet smoked paprika
2 tsps soy sauce
4 soft flour tortilla wraps, warmed
mayonnaise
2 small skinless chicken breasts, sliced into thin strips
0.75 tsps honey
80 g red onion, thinly sliced
1 yellow pepper, deseeded & thinly sliced
1 courgette, sliced into thin batons
2 tomatoes, deseeded & sliced into thin strips
0.75 tsps sweet smoked paprika
2 tsps soy sauce
4 soft flour tortilla wraps, warmed

Method
- To make the filling, heat half of the oil in a frying pan. Toss the chicken in the honey and fry for 3-4 minutes then remove from the pan.
- Add 1 tbsp of oil, onions, pepper and courgette, fry for 5-6 minutes. Season well.
- Return the chicken to the pan and mix together, adding paprika and soy sauce.
- Remove from the heat, add the tomatoes.
- Warm the wrap in a microwave, frying pan or oven. Spread with a little mayonnaise and spoon one sixth of the mixture in the centre of the wrap. Fold the bottom in, then roll up to form a tube.
