1 small carrot, peeled and grated
½ onion, finely chopped
1 tbsp fresh thyme, chopped
40g Cheddar or dairy free cheese, grated
¼ red pepper, finely diced
375g ready rolled puff pastry
1 egg, beaten
Put the vegan mince, carrot, onion , thyme, cheese, red pepper into a mixing bowl and mix well.
Unroll the pastry and brush with the beaten egg. Divide the pastry into three strips widthways ,
Make three sausage shapes out of the mixture and place on top of each strip or pastry . Fold over and wrap around the filling. Seal the edges and press down with a fork .
Slice each roll into 7 little sausage rolls. Brush with egg and sprinkle with sesame seeds .
Preheat the oven to 200C fan .
Put the sausage rolls onto a baking sheet.
Bake for 12 to 15 minutes until golden and crisp .
