100g short macaroni
25g butter
20g flour
175ml milk
50g strong cheddar, grated
2 tsp nutritional yeast
1 egg, beaten
75g Panko breadcrumbs

Method
- Cook the macaroni in boiling water according to packet instructions, drain and cool.
- Melt the butter in a saucepan. Add the flour and stir over the heat. Whisk in the milk, whisking until smooth.
- Add the Cheddar and nutritional yeast. Add the macaroni, stir and spoon into a bowl.
- Leave to cool, then chill in the fridge until cold. Roll the mixture into 18 balls.
- Dip each ball into the egg, then coat in the panko breadcrumbs.
- Heat a little oil in a frying pan. Add the balls and fry until golden brown.
