Ingredients
150g minced lamb
100g carrot, grated
200g potatoes, peeled & grated
50g onion, finely chopped
200ml unsalted meat or vegetable stock
1 tsp fresh thyme roughly chopped
1 tsp tomato purée

Method
- Heat a pan, add the minced lamb and fry until lightly browned.
- Add the vegetables and thyme, fry over the heat for 2 minutes.
- Add the stock and tomato purée, bring to the boil, cover and simmer for 20 minutes.
- Blend until smooth or until desired consistency.
