Hidden Veggie Tomato Sauce

Ingredients

2 tbsp olive oil
100g red onion, chopped
100g red pepper, diced
100g courgette, diced
100g carrot, diced
100g mushrooms, diced
1 large clove garlic, crushed
400g chopped tomatoes
400ml water or low salt veg stock
2 tbsp tomato puree

Method

  1. Heat the oil in a large saucepan.
  2. Add the veg (apart from the chopped tomatoes and puree) and fry for 5 mins over a high heat.
  3. Add the garlic and fry for 30 seconds.
  4. Add the chopped tomatoes, stock and tomato puree.
  5. Bring to the boil, cover and simmer for 15-20 mins.
  6. Blend until smooth.
