Ingredients
1 tbsp olive oil
1 onion, chopped
1/2 red pepper, diced
2 cloves garlic, crushed
75g sweet potatoes, peeled and diced
250g Piccolo cherry tomatoes, halved
150ml passata
200ml vegetable stock
2 tbsp basil, chopped

Method
- Heat the oil in a saucepan. Add the onion, pepper and garlic and fry for 3-5 minutes. Add the sweet potatoes, tomatoes and sauté for 2 minutes. Add the passata and stock.
- Cover and simmer for 15 minutes until tender.
- Add the basil and blend until smooth using a stick blender.
