Ingredients
2 tbsp olive oil
1 onion, chopped
1 small carrot, grated
1/2 stick celery, finely chopped
1/2 small red pepper, finely chopped
3 white mushrooms, diced
1/2 small courgette, grated
2 cloves garlic, crushed
200g passata
2 tbsp tomato puree
2 tbsp basil, chopped
150g self-raising flour
125g natural yoghurt
1 large tomato, sliced
75g mozzarella, grated
50g Parmesan, grated (or vegetarian alternative)

1/2 small red pepper, finely chopped

1/2 small courgette, grated
2 cloves garlic, crushed
200g passata
2 tbsp tomato puree
2 tbsp basil, chopped
150g self-raising flour
125g natural yoghurt
1 large tomato, sliced
75g mozzarella, grated
50g Parmesan, grated (or vegetarian alternative)
Method
- Preheat the oven to 180C.
- Heat the oil in a saucepan. Add the onion, carrot, celery, red pepper, mushrooms and courgettes. Cook for 5 minutes.
- Add the garlic and fry for 10 seconds. Add the passata and puree and cook for 15 minutes until the sauce has reduced and is thick. Set aside to cool.
- Put the flour and yoghurt into a bowl. Mix until you have a soft dough. Gently knead and roll out to a 23cm circle and place on a baking sheet lined with non-stick baking paper. Spoon the tomato sauce on top and spread out to the edge. Top with the tomato and cheese.
- Bake for about 20 minutes until golden brown and crisp.
