Hidden Veg & Chicken Sausages

1/2 onion, chopped
1/2 small red pepper, diced
1/2 carrot, peeled and grated
1 tsp chopped thyme
250g minced chicken
50g panko breadcrumbs
50g Parmesan cheese, grated (or dairy-free alternative)
1 tablespoon sunflower oil
6 Baker Street hot dog buns


  1. Put the onion, pepper and carrot into a food processor. Whiz until finely chopped. Add the chicken, breadcrumbs and cheese. Whiz again until finely chopped. Shape into 6 sausages.
  2. Heat the oil in a frying pan. Fry the sausages for about 10 minutes until golden brown and cooked through.
  3. Oven the hot dog buns and fill with lettuce. Add a sausage and drizzle with mayonnaise.
