Hidden Veg Chicken Bolognese

This Bolognese recipe is a sure-fire bet to get kids eating their 5-a-day (even the most ardent of veggie-dodgers). The simplicity of HECK’s Simply Chicken Mince makes this dish a breeze to prepare and perfect for those busy weeknight dinners. It’s a fabulous way to ensure that everyone around the dinner table is getting their share of goodness, all while enjoying a delicious, home-cooked meal.

Ingredients

1 red onion, finely chopped
½ red pepper, finely diced
1 small courgette, finely diced
1 carrot, peeled and finely diced
2 cloves garlic, crushed
500g Heck Simply Chicken mince
1 x 400g tin chopped tomatoes
1 tbsp sundried tomato paste
150ml chicken stock
2 tbsp fresh basil, chopped

Method

  1. Heat the oil in a large saucepan or skillet. Add the onion, pepper, courgette and carrot and fry for 5 minutes.
  2. Add the chicken mince a little at a time. Break up the mince and fry with the vegetables until browned and sealed.
  3. Add the garlic and fry for 30 seconds.
  4. Add the tomatoes, sundried tomato paste, stock and basil.
  5. Simmer for 20 minutes until reduced and you have a thick sauce.
