Hidden Veg Beef Burger with Sweet Potato Fries

My delicious hidden veg beef burger with sweet potato fries is made even tastier with Baker Street’s soft & tasty original burger buns.

Simply blitz all the ingredients together in a blender and you’re good to go. Freeze any leftover cooked burgers so you know you have a home-cooked meal ready and waiting on those busy days.

Ingredients

Burger
2 slices of bread
1 onion, chopped
1/2 red pepper, chopped
1 apple, peeled and grated
2 cloves garlic, crushed
500g lean minced beef
2 tsp thyme, chopped
2 tbsp parsley, chopped
1 tbsp ketchup
a few drops of Worcestershire sauce
1 x 6 pack of Baker Street Burger buns
Burger Sauce & Toppings
200g mayonnaise
1 tbsp sun dried tomato paste
75g sliced gherkins, chopped
Lettuce leaves
6 slices Edam cheese
6 cherry tomatoes, chopped
3 tbsp sweetcorn
1/2 avocado, diced
Sweet Potato Fries
3 sweet potatoes, cut into wedges
2 tbsp sunflower oil

Method

  1. Preheat the oven to 200C and line 1 baking sheet with baking parchment.
  2. Make the burgers. Put the bread into a processor. Whiz until fine crumbs, tip onto a plate. Add the onion, pepper, apple and garlic and whiz for a few seconds. Add the mince, breadcrumbs, herbs, ketchup, and Worcestershire sauce. Season and whiz until finely chopped. Shape into 6 burgers. Heat 1 tablespoon of oil in a large frying pan. Add the burgers and fry for 4-5 minutes each side until golden brown on both sides and cooked through in the middle.
  3. Toss the sweet potato fries with the oil, season lightly with salt and pepper, and spread them out on a lined baking sheet. Put the sweet potato chips in the oven and bake for 30 minutes, turning the chips halfway through the cooking time.
  4. For the Burger sauce, mix the mayonnaise, sun-dried tomato paste and gherkins together in a bowl.
  5. Mix the avocado, tomatoes, and sweetcorn together in a bowl.
  6. Toast the buns on a griddle pan until golden. Spread the sauce over the buns. Top with the lettuce, burgers, and cheese. Spoon the avocado, sweetcorn, and tomatoes on top. Add the top of the bun and serve.
