Goujons of Fish with Courgette Batons

Soft fillets of fish make perfect finger food alongside batons of baby courgettes – ready in minutes and a tasty way to introduce your little one to fish.

Ingredients

150g lemon sole fillets, skinned
1 ½ tbsp plain flour
75g baby courgettes, sliced into batons
1 tbsp sunflower oil
A knob of butter

Method

  1. Slice the lemon sole into goujons. Coat the sole in plain flour.
  2. Heat half the oil in a frying pan. Fry the batons for 2 to 3 minutes until lightly golden. Transfer to a plate.
  3. Add the remaining oil and butter to the frying pan. Fry the goujons for 2 to 3 minutes until pale golden and cooked through.

Not suitable for freezing
