When Jimmy brought 30 penguins over to celebrate Penguin New Year, everything had to be fish related. I drew the line at making fish flavoured cupcakes, but baked some delicious chocolate –orange cupcakes and decorated them to look like goldfish.

Ingredients
125g butter, at room temperature
125g golden caster sugar
110g self-raising flour
cocoa powder
2 eggs, lightly beaten
1 tsp orange zest, grated
50g plain chocolate chips
5 tbsp ready made buttercream icing

Tube black writing icing
Hundreds and thousands
Marshmallows
Blue and pink food colourings

110g self-raising flour

1 tsp orange zest, grated

Method
- Pre-heat the oven to 180C/350F/Gas 4. Beat together the butter and sugar until the mixture is fluffy and smooth.
- Sift together the flour and cocoa powder in a separate bowl. Add the eggs to the creamed butter mixture, a little at a time, adding a tablespoon of the flour mixture with the second egg. Mix in the orange zest and the remaining flour and cocoa, until blended.
- Finally stir in the chocolate pieces.
- Line a large muffin tray with 10 paper cases and fill each one until two-thirds full. Bake the muffins for 20-22 minutes. Allow to cool for a few minutes, and then remove the cupcakes and place on a wire cooling rack.
- Use half the tub of buttercream and divide into three. Colour one part blue and one part pink. When cool, spread a little buttercream over each of the cupcakes and then decorate to look like goldfish as in the photo.
