Frozen Berries with Hot White Chocolate Sauce

One of my favourite desserts and so easy to make. Its best to freeze the berries yourself as ready frozen berries tend to go a bit mushy when defrosted.

Ingredients

150g fresh mixed berries e.g. blackberries, raspberries, blueberries, strawberries, redcurrants
55g white chocolate, chopped into small pieces
4 tbsp double cream

Method

  1. To freeze the berries, line a rimmed baking sheet with parchment or greaseproof paper and arrange the berries in a single layer. When frozen, transfer to small freezer bags. They will last for 1 month and are also good in smoothies.
  2. Take the berries out of the freezer and divide between 3 bowls. Allow them to defrost slightly at room temperature, for around 10 minutes.
  3. Put the white chocolate and cream in a microwaveable jug and cook for 10 seconds, stir and repeat heating and stirring until chocolate has just melted (it will take 4–5 blasts) and you have a smooth sauce. Alternatively put the cream and chocolate in a small pan over a pan of simmering water and stir continuously until the chocolate has just melted.
  4. Pour the hot sauce immediately over the berries and serve at once.
