Pre heat the oven to 160 Fan. Line a muffin tin with 8 muffin cases.
Measure all of the cake ingredients into a mixing bowl. Whisk together and spoon into the cases. Bake for 18-20 minutes. Leave to cool.
Measure the frosting ingredients into another bowl. Beat together until smooth. Spread the frosting over the tops of the cakes.
Dye the coconut green with the colouring in a bowl. Sprinkle over half of the cakes. Sprinkle the digestives over the other half. Make 8 mini white golf balls out of the fondant and place on top. Add flags for decoration made from straws and paper triangles.
