Easy Salmon Rissoles

One of the best sources of calcium for little ones with a cow’s milk allergy is tinned salmon. These delicious mini Easy Salmon Rissoles make for the perfect finger food!

Ingredients

1 x 215g can red salmon, drained
2 tbsp Panko breadcrumbs
2 tbsp tomato ketchup
3 spring onions, finely chopped

Extra Panko breadcrumbs for coating
Sunflower oil for frying

Method

  1. Flake the salmon into a mixing bowl. Add the remaining ingredients. Fork together the salmon, breadcrumbs, ketchup and chopped, spring onions .
  2. Shape into 6 rissoles and coat in extra breadcrumbs
  3. Heat 2 tablespoons of oil in a frying pan. Add the rissoles and fry for 2 to 3 minutes on each side until golden and cooked through.
