2 large eggs
125g softened unsalted butter
125g caster sugar
1 tbsp milk
100g self-raising
25g cocoa powder

150g icing sugar
2 tbsp cocoa powder
50g dark chocolate, broken into pieces

Method
- Preheat the oven to 160 degrees and line a 12-hole muffin tin with 12 paper cases.
- Put all the cupcake ingredients in a large bowl and whisk with an electric hand-held whisk until light and fluffy (or use a stand mixer.) Divide the cake mixture evenly among the paper cases and bake in the oven for 20 – 25 mins until well risen and lightly golden-brown. Remove from the oven and leave to cool for a few minutes before transferring to a wire rack to cool completely.
- To make icing, whisk the butter and icing sugar in a bowl with an electric whisk. Add the cocoa powder and whisk again.
- Melt the chocolate in a heatproof bowl over a pan of simmering water (making sure the bowl isn’t touching the water), then stir it into the icing. Pipe the icing on top of the cakes using a piping bag fitted with a fluted nozzle or spread it with a spatula or a spoon.
- Roll out some white fondant icing to a thickness of 3mm. Slice it into 12 strips and fold to make little shirt collars. Place the collars on top of the icing. Roll out coloured fondant to a thickness of 2mm and cut out ties to add to the shirt. Decorate the ties with spots and stripes.
