Shoot these delicious arrows onto your loved one’s plate and they will be swooning with delight.
2 tbsp natural yoghurt
100ml (3 1/2 fl oz) milk
1 tsp lemon juice
1 tsp fresh thyme leaves or 1/4 tsp dried
1/4 tsp mild paprika
1 clove garlic, crushed
1/4 tsp salt
340g (12oz) skinless, boneless chicken breast, cut into approx. 2 cm cubes
2 red peppers
4 tbsp tomato ketchup
4 tbsp mayonnise
1 tsp sweet chilli sauce
1/2 tsp clear honey
You will also need 8 wooden skewers, soaked in water for at least 30 minutes
- Whisk the marinade ingredients together in a bowl along with a good grinding of black pepper. Add the chicken and stir to coat, then cover and marinate overnight in the refrigerator.
- Cut each pepper into quarters and remove the seeds. Cut a large HEART or triangle from each quarter to act as the arrowhead. Put on a plate, cover with clingfilm and refrigerate until needed. Stir together the ingredients for the dip, cover and refrigerate until needed.
- Preheat the grill to high. Thread the chicken onto the skewers, leaving a space at the top of each skewer. Season the chicken with a little salt and pepper and grill for 4-5 minutes, until half cooked. Turn the skewers over and thread a red pepper triangle onto the top of each skewer. Grill for a further 4-5 minutes, until the chicken is cooked through and the pepper is soft.
- Transfer the dip to small bowls and serve with the skewers.
