Crispy Chicken & Sweetcorn Croquettes

These mini crispy chicken croquettes are a fab finger food for babies and toddlers. Using leftover mashed potato and chicken means these ‘cheat’s’ croquettes are ready in just 15 minutes!

Ingredients

100g broccoli florets
150g cold mashed potato
2 tbsp mayonnaise
100g Sweetcorn, drained
4 spring onions, finely sliced
100g cooked chicken, finely diced
25g parmesan cheese, finely grated (or dairy-free alternative)
1 egg, beaten
60g panko breadcrumbs

Method

  1. Steam the broccoli in a steamer for 4 minutes. Cool and chop into small pieces.
  2. Mix the mashed potato, broccoli, mayonnaise, sweetcorn, spring onions, chicken, half of the panko breadcrumbs and Parmesan cheese together in a bowl. Season lightly.
  3. Shape into 12 sausage shapes.
  4. Dip into the beaten egg and then into the remaining panko breadcrumbs.
  5. Heat a little oil in a large frying pan. Add the croquettes and fry for a few minutes until golden on all sides.
