Couscous Salad

As a popular alternative to rice & pasta, couscous is light & fluffy & tastes great with raisins & pine nuts.

Prep Time: 15 minutes
Cook Time: No cooking required
Serves: 2
Great for:  Kids - 2-4 Years Kids 4+ Years

For the Couscous:

45 g couscous
125 ml hot vegetable stock
20 g red pepper, diced
1/2 medium carrot
2 spring onions, sliced
1 tbsp raisins
1 1/2 tbsp pine nuts toasted

For the Dressing

1 tbsp olive oil
1 1/2 tsp lemon juice
1/2 tsp honey
salt & pepper
  1. Put the couscous in a bowl.  Pour over the hot vegetable stock and leave to stand for 10 minutes.
  2. Fluff up the couscous with a fork.  Stir in the diced vegetables, raisins and pine nuts.
  3. Whisk together the ingredients for the dressing and stir into the couscous.  Season to taste.
