Cod Fillets with Tomato Salsa

This Cod Fillets with Tomato Salsa recipe is a delicious Mediterranean dish that will leave you satisfied. Serve as individual portions in a shallow bowl. Top with lots of fresh lemon and black pepper.

2 x 125 g cod fillets, skinned
Olive oil, for brushing
Salt and pepper
25 g white breadcrumbs
1/2 tablespoon snipped chives
¼ tsp lemon zest
15g Parmesan cheese, grated
Paprika, for topping
2 tomatoes, deseeded and diced
2 spring onions, sliced
1 tbsp chopped chives
1 tbsp chopped basil
1 tbsp rice wine vinegar
2 tbsp olive oil
A pinch of sugar


  1. Preheat the oven to 200°C/400°F/Gas 6.
  2. Put the cod fillets on a greased baking sheet, brush with the oil and season. Combine the breadcrumbs, chives, lemon zest and Parmesan and sprinkle over the cod. Top with paprika.
  3. Bake for 10 minutes, until just cooked, lightly golden and crisp.
  4. Mix together all the salsa ingredients and serve with the fish.
