Chicken with Apricots

Chicken with apricots is a fantastic flavour pairing. Apricots are high in fibre and iron and add a sweet addition to this savoury chicken puree.

1 tbsp mild olive oil
1/2 small onion, finely chopped
1 small garlic clove, crushed
100g chicken breast, cut into pieces
150g sweet potato, peeled and chopped
3 dried apricots, chopped
150ml passata
150ml unsalted chicken stock
  1. Heat the oil in a pan and saute the onion for about 5 minutes or until softened.
  2. Add the garlic and cook for 30 seconds.
  3. Add the chicken and saute for 2 to 3 minutes until sealed.
  4. Add the sweet potato, apricots, passata and stock.
  5. Bring up to the boil and then simmer for about 10 minutes or until the sweet potato is tender.
  6. Puree or finely chop or blend to reach the desired consistency for your baby.
