Chicken with Apricots and Chickpeas

Baby food shouldn’t be bland so add fresh ginger and garam masala to this chicken, apricot and chickpea puree to tingle baby’s taste-buds.

1 tbsp olive oil
100g onion, chopped
60g red pepper, chopped
150g carrot, peeled and diced
5g fresh ginger, grated
15g dried apricots, chopped
250g chopped tomatoes
1 tsp garam masala
75g chickpeas
150g chicken thighs, diced
200g unsalted chicken stock
  1. Heat the oil in a saucepan.
  2. Add the onion, red pepper, carrot, ginger and apricots and fry for a few minutes.
  3. Add the chicken, garam masala and ginger and fry for 2 minutes.
  4. Add the tomatoes, stock and chickpeas and bring up to the boil. Cover and simmer for 20 minutes until tender.
  5. Blend until smooth or until you reach the desired consistency for your baby.
