2 tbsp olive oil
1 onion, chopped
1 carrot, peeled and finely diced
2 cloves garlic, crushed
200g orzo
600ml chicken stock
75g frozen or fresh spinach
75g peas
50g sweetcorn
3 tbsp double cream
25g Parmesan cheese, grated
100g cooked chicken breast, diced

Method
- Heat the oil in a shallow pan. Add the onion and carrot and fry for 3-4 minutes.
- Add the garlic and fry for 10 seconds. Add the orzo and stock. Bring up to the boil and simmer for 12 minutes.
- Add the spinach, peas, sweetcorn, chicken and cream. simmer for 2-3 minutes. Add the cheese.
