Chicken, Parsnip, Carrot & Swede

This chicken, parsnip, carrot and swede puree recipe is the perfect weaning recipe. Plus, these flavours are a match made in root veggie heaven. Yummy!

Ingredients
A knob of unsalted butter
100g onion, chopped
100g parsnip, diced
250g carrot, diced
200g swede, diced
175g chicken breast, cubed
1 tsp fresh thyme, chopped
450ml water
50g Cheddar cheese, grated (optional)
Method
  1. Melt the butter in a saucepan. Add the onion, parsnip, carrot and swede and fry for 2 minutes. Add the remaining ingredients, except the cheese.
  2. Bring up to the boil, cover and simmer for 15 to 20 minutes until tender.
  3. Whiz until smooth or until you reach the desired consistency for your baby using a hand blender.
  4. Finally stir through the cheese (if using)
