Ingredients
750g new potatoes, halved
2 red onions, sliced into wedges
1 red pepper, sliced into large pieces
1kg chicken drumsticks
3 tbsp olive oil
2 cloves garlic, crushed
1 tbsp thyme, chopped
2 tbsp honey
350ml chicken stock

Method
- Preheat the oven to 200 Fan.
- Put the potatoes, onion, pepper and chicken into a very large roasting tin.
- Mix the oil, garlic, thyme and honey together in a small bowl. Pour over the ingredients and mix well. Season.
- Pour the stock into the base of the tin. Roast in the oven for 45 minutes until golden and cooked through
