Ingredients
For the chicken:
1 tbsp Korma curry paste
1 tsp apricot jam
1 tsp garam masala
1 clove garlic, crushed
Small piece of ginger, grated
2 x chicken breasts diced into pieces

For the salsa:
2 tomatoes, diced
¼ cucumber , diced
2 spring onions, sliced

To serve:
3 tortilla wraps
Iceberg lettuce
Mayonnaise

Method
- Mix the marinade ingredients together in a bowl. Add the chicken and coat in the mixture . Set aside to marinate in the fridge.
- Mix all of the salsa ingredients together in a bowl.
- Heat 1 tbsp of oil in a frying pan. When hot, add half of the chicken. Fry over a high heat for 4 minutes or until cooked through. Repeat with the remaining chicken.
- Spoon the chicken onto a wrap. Add the shredded lettuce, salsa and drizzle with mayonnaise.
