80g broccoli florets
1/2 onion, chopped
1 garlic clove, crushed
300g minced chicken
30g Parmesan cheese, grated (or dairy-free alternative)
60g fresh breadcrumbs
1 egg, beaten

Method
- Preheat the oven to 190C Fan. Line a baking sheet with non-stick paper and drizzle with 2 tablespoons of olive oil.
- Blanch the broccoli in boiling water for 2 minutes. Drain and refresh under cold water.
- Put the broccoli, onion, garlic, chicken, cheese, breadcrumbs and egg into a processor. Whiz until finely chopped. Shape into 25 balls.
- Put the balls onto the baking sheet and roll in the oil. Bake in the oven for 15 minutes, or until lightly golden.
