Chicken & Broccoli Balls

These chicken & broccoli balls are the perfect recipe to get your little ones to start feeding themselves. Packed with loads of protein and nutrients to help them grow.

Ingredients

80g broccoli florets
1/2 onion, chopped
1 garlic clove, crushed
300g minced chicken
30g Parmesan cheese, grated (or dairy-free alternative)
60g fresh breadcrumbs
1 egg, beaten

Method

  1. Preheat the oven to 190C Fan. Line a baking sheet with non-stick paper and drizzle with 2 tablespoons of olive oil.
  2. Blanch the broccoli in boiling water for 2 minutes. Drain and refresh under cold water.
  3. Put the broccoli, onion, garlic, chicken, cheese, breadcrumbs and egg into a processor. Whiz until finely chopped. Shape into 25 balls.
  4. Put the balls onto the baking sheet and roll in the oil.  Bake in the oven for 15 minutes, or until lightly golden.
