Ingredients
Chicken Balls
300g minced chicken
1/2 apple, peeled and grated
1/2 onion, finely chopped
25g panko
1 tsp fresh thyme, chopped
2 tablespoons basil, chopped
15g parmesan, grated
Orzo
2 tbs sunflower oil
1 large onion, chopped
1 red pepper, diced
50g carrots, diced
2 clove garlic, crushed
1 tsp sweet smoked paprika
125g orzo
500g chicken stock
400g chopped tomatoes
1 tsp thyme, chopped
8 cherry tomatoes, chopped

Method
- Make the meatballs. Measure the ingredients into a processor. Whiz together until finely chopped. Season lightly. Shape into 20 balls. Heat a little oil in a frying pan. Add the balls and fry until lightly browned. Set aside.
- Heat the oil in a skillet pan. Add the onion, pepper and carrot and saute for 5 minutes. Add the garlic and paprika and fry for 10 seconds. Add the orzo, stock, tomatoes and thyme. Bring up to the boil, cover and simmer for 10 minutes. Add the meatballs, cherry tomatoes and and stir, recover and simmer for 8 minutes until the pasta and meatballs are cooked.
