Chicken and Sweetcorn Chowder

A chowder is a type of soup but tends to be thicker. For this recipe, use chicken thigh instead of chicken breast as it contains twice as much iron and zinc. You can also use turkey thigh which is a great alternative to chicken in plenty of recipes.

Ingredients

A knob of unsalted butter
1 onion, finely chopped
150 g chicken thigh, diced
1.5 tbsp plain flour
250ml milk
3 tbsp tinned sweetcorn
45g Cheddar cheese, grated
1 tsp lemon juice
2 tsp chives, chopped
80g baby pasta

Method

  1. Melt the butter in a saucepan. Sauté the onion for 5 minutes. Meanwhile cook the pasta according to packet instructions.
  2. Add the chicken and fry for 4-5 minutes.
  3. Sprinkle over the flour, blend in the milk, add the sweetcorn and bring to the boil. Simmer for 5 minutes.
  4. Add the cheddar, lemon juice and chives.
  5. Add the drained pasta to the sauce and serve.
