Cherry Tomato & Chicken Pasta Salad

This simple cherry tomato and chicken pasta salad is loaded with veggies and drizzled with a Japanese-inspired dressing. It’s bound to be a staple recipe for quick and easy lunchtimes.

Ingredients

Pasta salad

100g fusilli pasta
100g broccoli florets
100g sweetcorn
220g Piccolo cherry tomatoes, halved
1 carrot, peeled & diced
Spring onions, chopped
100g cooked chicken, diced

Dressing

2 tbsp balsamic vinegar
5 tbsp olive oil
2 tsp soy sauce
½ tsp Dijon mustard
½ tsp grated ginger
Method

1. Cook the pasta in boiling water according the packet instructions.
2. Add the broccoli 3 minutes before the end of the cooking time. Drain and run under cold water.
3. Put the pasta, broccoli, sweetcorn, Piccolo cherry tomatoes, carrot, spring onion and chicken into a bowl.
4. Mix all of the dressing ingredients together in a bowl. Pour over the salad and enjoy!
