Cheese & Tomato Egg Rolls

This protein-packed recipe is the perfect pick-me-up for when energy levels are low. Enjoy as a balanced snack or delicious and nutritious packed lunch.

3 eggs
3 spring onions, finely sliced
50g Cheddar cheese, grated
2 small tomatoes, roughly chopped
1 tbsp fresh basil, chopped
A knob of butter


  1. Crack the eggs into a mixing bowl and beat. Add the spring onions, cheese, tomatoes and basil. Mix well.
  2. Melt a knob of butter in a small omelette pan. Add a third of the mixture, swirl around the pan and cook until just set.
  3. Fold over one end, then continue to fold until you make a roll. Place on a plate.
  4. Continue to make two extra egg rolls with the remaining mixture.
  5. Slice each roll into bite sized pieces.
