We all know that fish is packed with vitamins and minerals, but getting kids to dive into those all-important two portions of fish a week can be easier said than done. So here’s a cheeky way to make fish a part of their week! Kids will go bananas over these monkey sandwiches. And with extra vitamin D and calcium packed into the bread, this recipe will keep little learners in tip top shape!

Ingredients
4 slices Warburtons Half White Half Wholemeal medium bread
75g tuna, drained
1 tbsp mayonnaise
2 tsp tomato ketchup
30g cucumber, diced
1 spring onion, finely diced
2 extra slices cucumber for decorating

Method
- In a bowl, flake the tuna with a fork and then stir in the mayonnaise, ketchup, cucumber and spring onion Stir in the mayonnaise, ketchup, cucumber and spring onion.
- Put the bread onto a board and then spread the filling over 2 slices of bread. Top with the remaining bread and sandwich together.
- Stamp out one large round circle using an 11 cm round cutter. Cut out a round using a 7 cm round cutter and two smaller rounds using a 4 cm cutter.
- Put the large round sandwich onto a plate for the face. Put the medium round on top for the nose and mouth. Add the small rounds either side for the ears.
- For the monkey’s eyes, nose and mouth, cut small shapes out of the cucumber.
- Simply wrap in cling film before popping in their lunchbox.
TOP TIP! Egg and cress is another sarnie filler winner to try! Just add a pinch of curry powder and ½ tsp mango chutney for a cheeky flavour boost!
