Ingredients
150g carrot, peeled and grated
225g cauliflower florets
50g Parmesan, grated (or vegetarian alternative hard cheese)
50g Cheddar, grated
1 clove garlic, crushed
75g Panko
2 tbsp plain flour
1 tbsp sage, chopped
2 large eggs
Extra Panko for coating

Method
- Put the carrot and cauliflower into a processor. Whiz until for a few seconds. Add the cheeses, garlic, Panko, plain flour, sage and eggs. Process until finely chopped and shape into 15-18 tot shapes. Roll in the extra Panko.
- Heat a little oil in a frying pan. Fry the tots for 4-5 minutes until golden brown on all sides.
