Carrot, Banana & Sultana Muffins

These Carrot, Banana & Sultana Muffins are a great way to use up an over ripe banana.

You can make these into mini muffins simply by chopping up the sultanas and baking for 12 to 15 minutes. This recipe should make approximately 24 mini muffins.

Ingredients
100g soft butter
1 very ripe banana, mashed
75g grated carrot
75g caster sugar
1/2 tbsp maple syrup
125g self raising flour
1 tsp bicarbonate of soda
50g sultanas
2 eggs
¼ tsp mixed spice or cinnamon
Method
  1. Preheat the oven to 160C Fan .
  2. Line a muffin tin with 10 muffin cases .
  3. Measure all of the ingredients into a bowl. Whisk until light and fluffy using an electric hand whisk . Spoon into the cases.
  4. Bake for 20 minutes until well risen and lightly golden .
