The trick with quesadillas is to keep the filling really simple. These Caramelized Onion & Cheese Quesadillas are a great quick weeknight meal!

Ingredients
1 tbsp olive oil
1 large or 2 small red onions , thinly sliced
1/2 tsp fresh thyme leaves
1 tbsp balsamic vinegar
1 tsp soft brown sugar
2 flour tortillas
55g Cheddar cheese, grated
Salt and pepper

Method
- Heat the oil in a small frying pan. Add the onion and thyme and cook over a medium heat for 15 minutes until the onion is soft.
- Increase the heat to high and add the vinegar and sugar. Cook, stirring until the vinegar has evaporated. Remove from the heat and season to taste. Cool slightly.
- Heat a large non stick frying pan or griddle pan. Spread the onions over one of the wraps and scatter the cheese over.
- Sandwich with the second wrap, then griddle for 2 to 3 minutes either side until the cheese has melted or cook in the frying pan. Transfer to a board and cut into wedges.
