2 tsp olive oil
1/2 leek, sliced
50g butternut squash, diced
6 cherry tomatoes, diced
75g cooked rice
2 tsp cream cheese
1 tsp dill, chopped
50g salmon fillet, cooked and flaked
2 tsp Parmesan, grated

Method
- Heat the oil in a saucepan. Add the leek and squash and cook for 5 minutes.
- Add the cherry tomatoes and cook for 2 minutes.
- Add the cooked rice, cream cheese, dill and salmon. Stir over the heat adding a little water of the mixture is too thick.
- Add the cheese and stir well.
